ABOUT THE CHEFS

Jesús Delgado
Born and raised in Lima, Jesús is the Corporate Executive Chef at Tanta and Jarana. With experience at acclaimed restaurants like La Mar and Manko Doha, he brings deep Peruvian roots and global expertise to every dish.

Sergio Ornelas
Executive Chef at Matilda, Sergio’s journey began at 18 and took shape in some of Chicago’s top kitchens. Inspired by his time in Peruvian cuisine, he now champions bold, modern Mexican cooking with heart and precision.
